Avocado & Egg Breakfast Taco

Ingredients

  • 2 small soft tortillas (corn or flour)
  • 2 large eggs
  • 1 ripe DOLE BE Exotic!® avocado, sliced or mashed
  • 1 tbsp butter or olive oil
  • ½ lime, for squeezing
  • Salt & pepper to taste
  • Optional: chili flakes, hot sauce, coriander, or feta
  • Optional extras: Cherry tomatoes, halved or fresh spinach

Method

  1. Warm the tortillas: Heat tortillas in a dry pan for 30 seconds per side or microwave wrapped in a paper towel for 15 seconds. Set aside under a clean tea towel to keep warm.

  2. Prepare the eggs: In a small pan, melt butter or heat oil. Crack in the eggs and cook sunny-side-up. Season with salt and pepper.

  3. Assemble the tacos: Spread mashed avocado over each tortilla and top with your egg. Add your chosen toppings and finish with lime juice and chili flakes (if using).

  4. Serve and enjoy!
