Method
Warm the tortillas: Heat tortillas in a dry pan for 30 seconds per side or microwave wrapped in a paper towel for 15 seconds. Set aside under a clean tea towel to keep warm.
Prepare the eggs: In a small pan, melt butter or heat oil. Crack in the eggs and cook sunny-side-up. Season with salt and pepper.
Assemble the tacos: Spread mashed avocado over each tortilla and top with your egg. Add your chosen toppings and finish with lime juice and chili flakes (if using).
